We’re often asked what makes the difference between a light and a dark roast. Essentially, it comes down to the espresso’s solubility—Italian roasts are typically quite dark and oily, and unfortunately, they often taste good only in Italy. The goal here was to achieve this full-bodied flavor profile, with its dark chocolate notes and delicate sweetness, without making the coffee prone to oiling.

When roasting, we have to distinguish between the internal roast development and the external roast level. Internal roast development is determined more by the roasting time, while the exterior color is determined by the roast’s final temperature. With Nordic Dolce Vita, our goal was to bring the two as close together as possible to produce an espresso that is as full-bodied as possible without being astringent and ashy. We think we’ve found a good balance.

In the cup, this espresso is wonderfully full-bodied. The dark chocolate flavors immediately mingle with a lovely honey-like sweetness that leads beautifully into the espresso’s nougat-like finish.
