Description

When we launched our brand, we needed to offer a house blend that reflected who we are. We worked hard to create a bold coffee with plenty of nuance.

Why blend different beans?

Our House Coffee was created when we started our project. Exceptional single-origin coffees don’t need to be blended to win you over. The goal of creating a blend is to craft a unique coffee.

It wasn’t an easy challenge.

From the beginning of des Torréfacteurs Normands, we needed to find an idea for a coffee that would work for restaurants and grocery stores alike. Customers’ tastes are so different that success was far from guaranteed.
We wanted to create a 100% Arabica recipe that was full-bodied but not too bitter, with a pleasing mouthfeel and a very enjoyable aromatic profile. And above all, we wanted a house blend that would work in the morning, after a good meal, with or without milk, with or without sugar… In short, a coffee to drink all day long that everyone would enjoy! Coffee is a matter of taste, and it’s hard to bring as many palates as possible together over the same cup.

How did we meet the challenge?

First, we had to select the best pure Arabica beans to create the most subtle concentration of flavors possible. It took us a long time to get the proportions right for our House Blend. Every day, we weighed, roasted, and tasted blends that were more or less harmonious. Our family and friends often helped us in the early days. It naturally took several tries, but after a few unsuccessful attempts, we rose to the challenge! Maison, the first blend from Torréfacteur Monsieur MEURICE, was perfected in June 2016.

Which beans make up the House Blend?

This House Blend is made from several beans, but the production method matters too. Here are the origins of our best seller!

Where do the beans in the House Blend come from?

Brazil
For the base, we use Santos beans from Brazil for their smoothness. Their delicate aroma makes them a good fit for a pure Arabica blend.
India
To add strength and a pronounced finish, we add a touch of Indian plantation coffee. Beans from Asia always lend Arabica blends a full-bodied yet pleasant character.
Ethiopia
For added aromatic complexity, we use Moka Djimmah from Ethiopia. The slight acidity of the Moka gives our House Blend a lively cup.
Colombia
The Colombian beans soften this blend and add nuance. Their mellow character gives our blend a rounded profile.

Our little extra

Winning over the most discerning palates takes more than selecting the right beans. Our work as roasters is essential. The quality of our artisanal roasting brings out the smooth, slightly tangy aromatic nuances of our House Blend.
Controlling the flame allows the temperature to rise gradually. With our gas roaster, we have to constantly monitor the roast as it progresses. We don’t use a timer or a programmer to regulate the process; only the color of the beans tells us how the roast is going.
To control bitterness, you have to know when to stop the process. Roasting too long produces an unpleasant, acrid taste. This blend has been a real hit at the counters of many bars and restaurants we work with. Many grocery stores have made it the most popular choice on their shelves, and our regulars have made it a star in their coffee makers.
