Colombia El Trebol – Decaffeinated

Decaffeinated coffee and espresso don’t have the best reputation. Most of the time, they’re missing not only the caffeine sought by most coffee lovers, but also all of the flavor. We’ve found a very special bean that changes things! Anyone who has a problem with caffeine but still doesn’t want to give up enjoying coffee will love our decaffeinated coffee and espresso. It’s a 100% Arabica from Colombia that we source fairly and directly through Colombian Spirit. The special decaffeination process and gentle roasting produce an unparalleled flavor that makes you wonder if this is really a decaffeinated bean.

Our decaffeinated coffee is made from 100% Arabica, using only first-rate varieties. Its flavor stands out for its full-bodied, harmonious profile, with notes of dark berries, chocolate, and a sweet hint of sugarcane, combined with a medium-bodied, rounded body.

Decaffeinated coffee – the gentle sugarcane decaffeination method

This coffee is decaffeinated using the so-called sugarcane method. Only natural solvents are used in this process. The natural solvent is created by mixing natural acetic acid with sugarcane molasses. The decaffeination process is similar to a sauna visit: to make the coffee beans accessible to the solvent, they’re treated with steam, which opens the pores on the surface. For the decaffeination process itself, the beans are immersed in a bath of water and solvent, which binds to the caffeine and removes it from the beans. The beans are then steamed and rinsed once more, leaving nothing behind from the “sauna bath.” This method preserves the flavors especially well compared to other decaffeination processes. Since Colombia also grows a great deal of sugarcane, farmers can carry out this process right on their farms.

Our decaffeinated filter coffee is washed processed. Only red, ripe cherries were picked at harvest, and quality was ensured through subsequent inspections during washing, drying, hulling, and fermentation.

El Trebol women’s cooperative – solidarity in action

The El Trebol women’s association in Colombia’s Santander region consists of 74 farms, all run exclusively by women. The cooperative was born out of economic necessity – some of the individual farms are very small, and by joining together in solidarity, the women can support one another with technical equipment, seedlings, or know-how. Ultimately, this leads to a stronger market position through improved quality. Their collaboration with Colombian Spirit is also a great help, as the company markets almost the entire El Trebol harvest.

One special feature is the topography of the participating farms. They are almost all located on shady slopes, so the coffee grows slowly, allowing especially large and sweet coffee cherries to develop.

Source: Colombian Spirit

Colombian Spirit was founded by Maria Mercedes Grajales and Andreas Tischendorf. Their coffees come from various family-run farms that produce excellent coffee. Colombian Spirit buys directly from farmers, without intermediaries, and pays 50% more than the standard world market price. They also provide farmers with training, improving bean quality and farm operations. The Grajanes family of La Cristalina farm is closely connected to Colombian Spirit, as farmer German Grajanes is Maria’s grandfather. Colombian Spirit exports the highest-quality Colombian coffees from individual farmers directly to Germany. This ensures that farmers also receive their fair share of the value chain.
