origin and sourcing

Kenya Githiga comes from Githiga, in the Githunguri area of Kiambu County, one of Kenya’s Central Region coffee-growing areas. This AA-graded lot comprises the Ruiru 11, SL-34, SL-28, and Batian varieties and is grown by smallholders through the local cooperative system.

After harvesting, producers deliver the cherries to washing stations or collection centers managed by the cooperatives. The fruit is first sorted to remove unripe or defective cherries, and each delivery is recorded using the individual producer’s ID, ensuring traceability throughout the process.

The coffee is processed using the traditional Kenyan washed method. The cherries are depulped with disc pulpers, and the parchment is separated by density before dry fermentation in concrete tanks. This is followed by intermediate washes and soaking, then slow drying on traditional tables or raised beds. During this stage, the coffee is protected from sun and rain as needed, and moisture is carefully monitored until it reaches around 11–12%.

The cooperative model is also an integral part of this coffee’s identity. Kenyan cooperatives bring together hundreds of small producers and collectively manage the processing and sale of lots. Once the coffee is sold and operating costs have been deducted, the proceeds are distributed to members in proportion to the kilos of cherries they delivered.

The Kenyan system also places particular emphasis on traceability and financial transparency: lots, quality grades, sale prices, and the cooperatives of origin are recorded, while producers can check how proceeds are distributed through their cooperative.

With a score of 88, Kenya Githiga was described during tasting as dense and sweet. Distinct notes of dried mango, apricot, and stone fruit emerge in the cup, accompanied by the soft sweetness of caramel.

A clean, juicy, and structured Kenya that expresses the precision of the washed process and the distinctive character of coffees from the country’s Central Highlands.
