origin and provenance

Indonesia Bajawa comes from the island of Flores, in the mountainous region of Bajawa, where coffee cultivation is deeply intertwined with the forest, local communities, and agricultural traditions passed down through generations.

The plants grow at elevations of 1,200 to 1,400 meters on mineral-rich volcanic soils. The fertility of this area is linked to the presence of the Inerije, Wolobobo, and Ebulobo volcanoes, which have helped create particularly favorable conditions for growing Arabica.

This lot, selected by JYN Group, brings together coffee from the Line S and S795 varieties grown by small local producers. Many farms are about one hectare in size, and some of the crops grow on traditional tanah adat, literally “ancestral lands”: land managed collectively by communities and entrusted to families according to local customs.

In some areas, coffee grows within protected forests, where farmers can cultivate it while preserving the tall trees. The result is a production system closely connected to the forest ecosystem and the biodiversity of Flores.

The traditional Indonesian Wet Hulled process further defines this coffee’s character. After harvesting, the cherries are depulped and left to ferment briefly with the mucilage. The coffee is then partially washed and dried until it retains considerably more moisture than with conventional processes. The parchment is removed while the bean is still wet, before final drying.

This processing method contributes to the lot’s characteristic full, creamy body, low acidity, and aromatic depth.

The cup is intense and lingering: dark chocolate and unsweetened cocoa meet tobacco, black pepper, and nutmeg, while notes of molasses and caramel bring sweetness, leaving long hints of exotic spices on the finish.

An authentic, bold Indonesian coffee that tells the story of Bajawa’s volcanic landscape, forests, and communities in every cup.
