Guaya’b: Women-Produced Coffee from Huehuetenango, Guatemala
Guaya’b is a fully washed coffee from the rugged highlands of Huehuetenango, Guatemala, produced by women members of Guaya’b Asociación Civil. The cooperative brings together 634 smallholder families, with this particular lot traceable to 115 women participating in the Manos de Mujer program. Through collaboration, centralized processing, and producer support, Guaya’b helps farming families overcome the challenges of cultivating coffee in this remote mountainous region.
About Guaya’b
Grown between 900 and 1,850 metres above sea level, this coffee comes from small farms scattered throughout Huehuetenango. The region’s rugged terrain and varied elevations create challenging farming conditions, but also provide an environment well suited to producing distinctive, high-quality coffees.
Guaya’b Asociación Civil supports its members through organic agricultural training, technical assistance, soil analysis, micro-financing, and education in organic fertilizer production. During harvest, the cooperative also provides childcare, giving farming families a safe place for their children while producers are working in the fields.
Manos de Mujer & Washed Processing
This lot is produced by 115 women participating in the Manos de Mujer program, highlighting the important role women play throughout Huehuetenango’s coffee-growing communities.
Freshly harvested cherries are delivered daily to Guaya’b’s centralized wet mill, where they are floated to remove damaged and underripe fruit before being depulped. The coffee is then fermented for 36–48 hours, washed, and sorted by density in water channels.
Following washing, the coffee is sun-dried on patios until it reaches approximately 11% moisture. Centralized processing provides smallholder farmers with access to carefully controlled processing without requiring each family to invest in its own milling infrastructure.
Flavour Profile
Guaya’b offers a rich and approachable cup with notes of chocolate, raisin, and toffee. Dried-fruit sweetness brings depth to the profile, while chocolate and caramelized sweetness create a smooth, comforting finish.
