Ethiopia Sidamo BIO*

Discover our Ayla Sidamo Organic, an exceptional coffee grown at an altitude of 1,950 to 2,000 meters in the mountainous Sidamo region of Ethiopia, the historic birthplace of coffee. Made from the local JARC 74110 and JARC 74158 varieties, this lot reflects the full aromatic richness and expertise of Ethiopian producers. This coffee comes from the Ayla washing station, founded in 2018 by Faysel Abdosh and supplied by nearly 800 smallholder producers who grow coffee on family plots of about half an acre. Carefully hand-picked, only perfectly ripe cherries are selected before being depulped and fermented for 36 to 48 hours. The coffee is then washed with clean water and slowly dried on raised African beds, ensuring consistent quality and optimal aromatic expression. Certified organic, this coffee is also part of a sustainable initiative: Ayla station actively supports local development by building schools, improving access to clean drinking water, and connecting homes to electricity. In the cup, this Sidamo reveals an elegant, bright profile marked by notes of black pepper, cardamom, and black cherry, with a lovely vibrancy.
