Since the 2019–2020 harvest, Swift Coffee Sourcing has partnered with Hirut and her sister, Mahder, through their washing station and export company. Despite challenges, including damage from the 2017 riots, they remain committed to producing reliable coffee and supporting their community. They recently completed a clinic and school library in Dumerso and plan to build a daycare. Their woman-owned business supports hundreds of local outgrower families.

Origin & Growers

Idido is a collaboration between Swift and Dumerso, initiated by Ethiopia Coordinator Aron Fesaha. Beti and Mahder sourced cherries from the higher-altitude hills of Idido and processed them with Aron at Dumerso, creating a coffee representative of the broader Yirgacheffe region.

Processing Method: Spontaneous Ferment

Inspired by open-air fermentation in lambic-style beers, spontaneous fermentation uses naturally occurring yeasts and bacteria to break down mucilage and enhance the coffee’s inherent qualities. This water-efficient method produces exceptional washed coffee without the approximately 40,000 liters typically required for a full fermentation cycle.

Ripe cherries are carefully hand-sorted, floated by density, and sorted again to ensure consistency. After pulping, the parchment is placed in small batches in dry fermentation tanks, allowing wild microorganisms to break down the mucilage. Once fermentation is complete, the coffee is moved to shaded drying beds, where gentle sunlight and consistent airflow help it reach the target moisture level.
