PROCESS
Catiope is a Colombian variety developed by CENICAFÉ, resulting from a cross between Castillo and Ethiopian cultivars. This process begins with an initial 24-hour fermentation of the whole cherries. After a flotation step and depulping, the beans are placed in sealed barrels where oxygen is replaced with CO2 to create an anaerobic environment. This anaerobic stage lasts approximately 48 hours, encouraging the activity of native yeasts and bacteria to enhance the coffee's complexity. Following this, the coffee is washed and undergoes a slow sun-drying process in cherry for 25 days. This protocol results in a clean and expressive cup profile with notes of grape, wine, and red fruits.
