Description

Large beans, distinctive genetics, and a multifaceted cup profile.

El Tucan comes from Finca Chiripa in Chiapas, Mexico. On the Iglesia plot, Thomas Edelmann Blass cultivates this special Pacamara. The Edelmann family has been connected to coffee growing in the region since the late 19th century.

Pacamara is a cross between Pacas and Maragogipe. The exceptional size of the beans, among other traits, comes from Maragogipe. The variety is known for its high quality potential and complex, elegant cup profiles. El Tucan is processed Fully Washed and then refined at Herzogkaffee with a roast profile tailored to this coffee.

El Tucan offers a multifaceted, harmonious cup: chestnut and almond form a soft, nutty base, complemented by raisin and mandarin with fruity sweetness and delicate freshness. Milk chocolate adds a rounded, creamy impression.
