El Salvador - Finca El Salvador Direct Trade / Filterkaffee

Rodolfo Ruffatti Battle is a visionary, friend, and passionate coffee farmer. At his Finca El Salvador at the foot of the Santa Ana volcano, he cultivates numerous Arabica varieties and has brought a disused dry mill back into operation for the region.

This Portillo lot is the third generation of a variety bred by Salvador Portillo through cross-pollination. He never recorded which varieties went into it. The results are impressive nonetheless: lively acidity, high yields, and greater resistance to fungal diseases (coffee rust). For this lot, the cherries were fermented for 120 hours in a low-oxygen environment and dried on African Beds. This gives the coffee body, funky flavors, and excellent sweetness.

In the cup, we taste sour cherry, stewed plum, apple, and cookies. A true delight as a V60, Aeropress, French press, cold brew, or fruity espresso. Enjoy!
