Tell me more about El Botón

Fully automatic coffee machines brew coffee differently from portafilter machines. So the question is: which coffee beans are suitable for a fully automatic machine? Based on our understanding of coffee, we look for beans with plenty of body and a rich texture. Instead of roasting the coffee very dark, we extend the roast and have developed a roast profile specifically for fully automatic coffee machines. The coffees come from our friend César Marin, from whom we have been buying coffee since 2023, and from Bharath Belliappa in India, whom Nadja visited for the first time in spring 2026. El Botón brings together everything we look for in a coffee: the transparent sourcing of green coffee, the thoughtful production practices of both producers, clear flavor notes, and a precise roast.

Why does the coffee taste the way it does?

We chose a blend to bring together two attributes: lighter flavors (Peru) and a more classic aftertaste (India). César's coffee from Peru brings a smooth texture and lightly floral notes. Bharath's Robusta from India gives the coffee a bold foundation and accentuates the aftertaste.

How do we roast this coffee?

The way coffee is distributed in the brewing chamber and the lower brewing pressure in a fully automatic machine inspired us to try a different roasting approach. Unlike espresso for a portafilter machine, where we gradually reduce the gas supply, we increase it again during the final quarter of the roast. This brings the coffee to a higher final temperature over a medium-length roast, giving it caramel notes.
