ECUADOR Finca Soledad »Curated by Champions«

In the second release of our “Curated by Champions” line, we’re presenting Ecuador Finca Soledad, a coffee with notes of elderflower, honey and mulberry.

The green coffee comes from Finca Soledad in Ecuador’s Andean region, run by José “Pepe” Ignacio Jijón. In June 2024, we were in Copenhagen to compete in the World Coffee Roasting Championships. Of course, we took the opportunity to explore the local coffee scene and visit various cafés and roasters. A stop at April Coffee was an essential part of the trip. We enjoyed the special atmosphere over a wonderful pour-over and had an in-depth conversation about coffee. Before long, we got to talking with our neighbors at the table: Pepe and his son José, coffee producers from Ecuador. We had a fascinating exchange about our different perspectives on coffee—one that has stayed with us ever since. We’ve continued to run into each other at various coffee events. Eventually, we asked Pepe if we could showcase and roast his coffee. We were delighted when he agreed and placed his trust in us.

This Arabica coffee of the Sidra variety is grown at 1,515 meters, processed as honey, and then dried with great care under tightly controlled conditions. It spends up to 40 days in a dark, climate-controlled room with dehumidifiers. 

Pepe is a highly sought-after coffee producer who works with some of the world’s best roasters. We’re especially proud to present these exceptional coffees. We thank Pepe for our trusted partnership. For our “Curated by Champions” line, we store the green coffee frozen and roast it in small batches on our modern Roest coffee roaster to bring out each coffee’s full potential.
