Don Pacho is a tribute to the people who have shaped coffee cultivation in Colombia for generations. Named after the mules that transport coffee through the steep Andes, this coffee represents tradition, craftsmanship, and Colombia's deep connection to its coffee culture.

Grown in the mountains of the Huila region and produced by the farmers of the CADEFIHUILA cooperative, this coffee brings together everything that makes high-quality Colombian Arabicas so well regarded: pleasant sweetness, lively fruitiness, and remarkable balance.

Origin & Terroir

The coffee cherries grow at around 1,750 meters above sea level in the Andes of Huila. Fertile clay soils, regular rainfall, and the region's mild climate create ideal conditions for coffees with a clean structure and plenty of aromatics.

The Huila region is one of Colombia's best-known coffee-growing areas and produces some of the country's most exciting coffees year after year.

Variety & Processing

Caturra and Tabi Arabica varieties are grown for Don Pacho, finding ideal conditions on the mountain slopes of Huila. The ripe coffee cherries are hand-picked and then traditionally washed—a processing method known for the clean, balanced flavor profile of Colombian coffees.

After harvesting, the cherries ferment for around 24 hours before the pulp is removed. This is followed by about 12 more hours of controlled fermentation in water, allowing the beans to develop their distinctive clarity and balance. They are then carefully dried—either in the Andean sun or, depending on local conditions, in specially designated drying facilities.

The combination of Caturra and Tabi varieties with traditional washed processing creates a cup with a clean structure, pleasant sweetness, and the elegant fruitiness for which coffees from Huila are celebrated worldwide.

Flavor – Fruity, Sweet & Balanced

Don Pacho combines the characteristic clarity of a washed coffee from Huila with pleasant sweetness and lively fruitiness. The different flavors blend harmoniously, creating a cup that is both approachable and complex.

Grapefruit – fresh citrus notes with a fine, lively acidity

Mandarin – juicy sweetness and pleasant freshness

Green apple – crisp fruitiness and clarity

Almond – subtle nuttiness and structure

Peach – soft fruit and natural sweetness

Milk chocolate – creamy body and a harmonious finish

The cup is clean and balanced, with fruitiness and sweetness in perfect harmony. This coffee stands out for its balance and reaches its full potential as filter coffee and with other brewing methods.
