ABOUT THIS COFFEE

This coffee is decaffeinated with water by Descamex, a company our coffee sourcer has worked with for many years. This decaffeination process uses no solvents.
First, the beans are placed in a steam bath to extract their soluble aromatic compounds and caffeine. The water is then filtered to retain only the aromas. This first batch is sold at a low price, and the water is kept for subsequent batches.
The green coffee beans in subsequent batches are immersed in water baths containing the aromatic compounds extracted earlier. Through osmosis (or diffusion), 50% of the caffeine in these beans passes into the water bath, while the remaining 50% stays in the beans. This process is repeated until the caffeine content in the beans reaches between 0.01 and 0.02%.

The Chiapas region
In southwestern Mexico, the Chiapas region has varied terrain, with coastlines, valleys, mountains, and tropical forests. Coffee is grown at altitudes between 1,300 and 1,700 meters. It is one of the most important regions for Mexican coffee production, accounting for 40% of the country's total output.
Notably, Chiapas shares a border with the famous Guatemalan coffee-growing region of Huehuetenango, which considerably influences the coffee's aromatic profile.
The climate in Chiapas supports rich and diverse agriculture. Mexico is a varied and fascinating coffee-growing region. It is home to many Indigenous communities: Mayas, Tseltal, Tzotzil, Ch’ol, Tojol-ab… farmers proud of their heritage and unique varieties, which date back several centuries. Coffee farms are most often family-owned, and there are an increasing number of solidarity-based cooperatives. In short, this region is extraordinarily rich in culinary, cultural, and geographic diversity!
