origin and provenance

This coffee comes from a selection of lots grown by Colombian producers in the regions of Huila, Tolima, and Caldas, then processed at El Vergel Estate using advanced controlled fermentation techniques.

The cherries are hand-picked and undergo a 24-hour pre-fermentation in plastic bags, followed by a further 24 hours of fermentation in the cherry. After depulping, the coffee undergoes a 5-day anaerobic co-fermentation with dehydrated strawberries and selected yeasts, allowing the beans to absorb intense fruity aromas.

The coffee is then mechanically dried for about 10 days to ensure consistency and profile stability, before a final resting period in GrainPro.

In the cup, it delivers an explosive, contemporary profile: strawberry sweetness takes center stage, accompanied by notes of red berries and brown sugar, and a lively citrus acidity that brings energy and freshness to the drinking experience.
