Colombia: Pink Bourbon

This washed Pink Bourboncomes from Finca El Paraíso in Cauca, Colombia, where the Bermudez brothers grow it between 1,700 and 1,850 masl. For this lot, the process includes oxidation, depulping, and an open-tank stage, followed by controlled mechanical drying, a sequence that forms part of this particular expression of the variety.

This Pink Bourbon follows a more traditional washed preparation than many of Finca El Paraíso’s experimental lots. After oxidation, the cherries are depulped and the coffee continues processing in open tanks, keeping the focus on the variety and the quality of the selected fruit.

Drying takes place mechanically at a controlled temperature of 38°C, followed by stabilization and cool storage. This measured sequence helps the coffee reach an even moisture level before storage while carrying its delicate aromatics and silky structure through to the final cup.
