This particular lot comes from Finca Las Brisas, a family-run farm in Acevedo, Huila, where Jhon Wilmer Cuellar and his family have spent years exploring rare varieties and experimenting with different processing methods.
Papayo itself is a rather rare and mysterious variety, named after the unusual, elongated shape of its cherries. Its exact genetic origins are still unclear, although research suggests a connection to Ethiopian landrace varieties.
And the coffee? Finally, after quite some time, a really clean and elegant coffee among our more “expensive“ offerings. No crazy fermentation, just a beautifully washed coffee that lets the variety speak for itself. Expect vibrant, juicy acidity, delicate florals, plenty of sweetness and a complex, fruit-forward character.
I managed to get our hands on just 48 kg of green coffee (two 24 kg boxes), so might be gone quickly.
