An experimental coffee produced by Jairo Arcila at Santa Mónica farm, in the Armenia region of Quindío.

This 100% Castillo microlot comes from a controlled 48-hour dry anaerobic fermentation process. Green apple is added to the fermentation environment during this stage, helping create a fresh and distinctive aromatic profile.

The coffee is then gently washed and transferred to raised beds for controlled drying at temperatures below 35°C, until it reaches the ideal moisture content.

The Castillo variety, developed by the Federación Nacional de Cafeteros, is known for its high productivity and resistance to coffee leaf rust, as well as its ability to produce clean, well-defined profiles.

The cup is expressed with great precision: the freshness of green apple combines with the sweetness of grape and caramel, supported by bright acidity that makes each sip lively and clean.
