Colombia Granja Paraiso Tabi comes from the celebrated Granja Paraiso 92, the farm of Wilton Benitez, one of the most innovative producers on the global specialty coffee scene. Located at 1,950 meters above sea level, the finca has become a benchmark thanks to its combination of scientific research, microbiological control, and experimentation with fermentation processes.

The cherries are harvested exclusively by hand and undergo a rigorous selection process based on size and density. After double sterilization with ozonated water and ultraviolet light, the coffee is immersed for a few seconds in 90 °C water to enhance the fruit’s natural sweetness. It then undergoes 62 hours of anaerobic fermentation in bioreactors at a controlled temperature of 20 °C, inoculated with SafLager S-23 yeast, followed by 88 hours of slow drying.

The Tabi variety, developed in Colombia to combine cup quality with disease resistance, finds extraordinary expression through this process. Scoring 89 SCA points, this lot offers a vibrant, clean, structured cup, characterized by juicy sweetness, bright acidity, and remarkable aromatic complexity.
