origin and provenance
This exclusive microlot comes from Granja Paraiso 92, Wilton Benitez’s farm, considered one of the most innovative and advanced operations in the global specialty coffee scene.
Chiroso is one of the most sought-after varieties among coffee enthusiasts and professionals for its remarkable ability to develop complex, floral, and fruity flavor profiles. Grown at 1,950 meters above sea level, it benefits from ideal climatic conditions that promote slow cherry ripening and high sugar concentration.
After hand-picking, the cherries are sorted by size and density and undergo a rigorous sterilization protocol using ozonated water and ultraviolet light. The coffee is then immersed in water at 90°C to enhance the fruit’s natural sweetness.
Fermentation takes place for 62 hours in temperature-controlled anaerobic bioreactors with the addition of selected SafLager S-23 yeast. Once fermentation is complete, the coffee is dried for 88 hours at 40°C, resulting in extraordinary aromatic precision and an impeccably clean cup.
Intense notes of nectarine, apricot, strawberry, and hibiscus come through in the cup, accompanied by nuances of lychee liqueur, coriander, white pepper, and cool cardamom. The body is silky and oily, the structure complex and perfectly balanced, while the long, fresh finish evokes mint and sweet spices.
A rare and spectacular coffee that represents one of the finest examples of innovation applied to contemporary specialty coffee.
