Inspired by an alloy of gold, copper, and silver used in Colombia to create exquisite handcrafted objects, Tumbaga Sugarcane takes decaffeinated coffee to a higher level. Decaffeination is achieved using ethyl acetate (EA), a natural substance derived from molasses. The beans are first moistened with water, then EA is circulated: this compound selectively binds to the caffeine, extracting it without altering the other precious aromatic compounds.

Once the desired level of decaffeination has been reached, any remaining traces of EA are removed with steam. Since this method tends to enhance the cup’s sweetness and brightness, only lots with a full body, pronounced sweetness, and restrained acidity are selected.

The result? A rounded, chocolatey, pleasantly sweet decaf that can hold its own against “caffeinated” coffees. Probably the best decaf on the market.
