Colombia Finca Milán - “Logan” Culturing Geisha

Finca Milán sits at 1,500 metres in the hills outside Pereira, Risaralda, and has grown coffee since 1982. It’s the innovation farm of Café UBA, run by third-generation grower Julio César Madrid alongside Julio Andrés Quiceno. New fermentation methods are developed and tested here before they’re used across UBA’s other farms.

This lot uses UBA’s Culturing process, “Logan”. The coffee is fermented for 120 hours under controlled conditions with selected yeast cultures and a mix of pineapple, blackberry and sugarcane. It’s then washed and dried in three stages over 20 days. The method grew out of UBA’s research with Universidad de los Andes into how specific microbes shape flavour.

It’s an intensely fruity cup: strawberry jam up front, with ripe banana, finishing with blueberry.
