Description
| Huila is a department in the southern part of the Andean region, and is currently Colombia’s leading department in both production and quality. Huila is the epicenter of some of the world’s finest specialty coffees. This is demonstrated by the repeated titles Huila coffee growers have earned in the “Cup of Excellence” competition. Coffee farming in this department is characterized by producing coffee with a commitment to sustainable practices, taking into account soil conservation, respect for natural forests, and the responsible use of environmental resources. Its producers are aware that quality and consistency are key to increasing their income. Additional social programs and services help improve their quality of life. They see the farm as a business that must be profitable and competitive, and grow coffee under partial shade. Coffee is cultivated on 139,138 hectares across 35 municipalities. The department borders Tolima, Cundinamarca, Meta, Caquetá, and Cauca. Rivers rise among its mountains, and its landscapes feature a range of natural elements, including volcanoes, lowlands, rolling terrain, rainfall, and winds, with temperatures that vary according to altitude. The department has several climate zones, including warm, páramo, and cold, with temperate conditions covering the largest area. But beyond its favorable geography, the commitment and dedication of Huila’s producers to bean quality, with care given to every stage of processing, have helped bring out the bean’s intrinsic qualities. |
| Cadefihuila was founded in 1963 in response to the need to market parchment coffee produced by Huila growers, as well as the need for small producers to join together in a cooperative that would represent their interests. Today, the cooperative has 3,950 members. |
Huila coffee is washed Arabica coffee with a mild profile. Once processed, it
is characterized by a balanced overall impression, with sweet notes, medium-to-high
acidity and body, and an intense fragrance and aroma with fruity and caramel-like
sensations.
This cup profile results from climatic and geographic factors unique to this
region, such as fewer hours of sunshine (3.5 hours/day) due to cloud cover,
consistent daytime temperatures that favor the accumulation of chemical
compounds in the fruit, and elevations ranging from 1,000
to 2,200 meters above sea level. The result is a coffee bean
with a uniform cup profile.
