Description

Irma Tinoco runs San Luis farm with the help of her children, Patricia and Omar. They dedicated themselves to organic farming and preserving the
Typica variety. The Typica and Bourbon varieties crossed spontaneously on their farm, and they named the resulting variety Typica FSL. This semi-washed coffee highlights the best qualities of this variety. Omar does an excellent job of environmental conservation, and his farm is proof of that. It is literally inside a forest, and this is no coincidence.

With shade from the trees, he ensures the coffees ripen slowly and become more nutritious. The soil is also home to many fungi that help improve their quality. His coffee is complex, full of tropical, citrus, and sweet notes. And he is passionate and humble. Every sip reflects his dedication to quality and commitment to innovation at San Luis farm, which leads to many of Omar’s lots being used in barista and coffee competitions.

For 30 years, they have been transforming their family legacy, replicating an agroforestry system modeled on an Ethiopian forest, where the goal is complete balance with the ecosystem while producing exceptionally high-quality coffees. They care for both the environment, seeking washing methods that use less water, and the people who work there.
