El Salvador isn’t the first country that comes to mind when you think of specialty coffee, and that’s exactly what makes it interesting. This SGH lot combines four varieties, including Pacamara, a variety native to El Salvador known for its large beans and complex profile. 83.25 SCA points, washed process, and a citrusy, fruity profile with a smooth, rounded body that sets it apart from the other Central American coffees in the catalog.

Description
Specialty coffee from El Salvador for anyone looking beyond the usual origins
El Salvador was once the world’s fourth-largest coffee producer, and although production has been declining for decades, the focus has shifted from volume to quality. A new generation of Salvadoran producers has taken the lead with a different vision, experimenting with varieties and processes, and the results can be seen in the high-scoring lots the country continues to produce. This is one of them.
The SGH lot includes four Arabica varieties: Bourbon, Caturra, Catuaí, and Pacamara. The first three are well-established varieties in Central America. The fourth is different. Pacamara is a variety native to El Salvador, developed in the country by crossing Pacas and Maragogipe. It is known for its especially large beans and for producing cups with notable aromatic complexity. Two of the most highly regarded Salvadoran coffee varieties, Pacas and Pacamara, originated here. That says something about the depth of the country’s coffee-growing tradition.
The process is washed, a method favored in El Salvador by the prolonged dry season during harvest, which makes sun-drying easier and helps produce clean cups. The resulting profile is mildly citrusy and fruity, with a rounded body that earns a high score in internal cupping. It’s a balanced, approachable coffee with no rough edges.
Recommended for espresso, pour-over, French press, and superautomatic machines. In pour-over and French press, the citrus notes and rounded body come through fully. In espresso, the body becomes more pronounced and the fruity notes concentrate nicely. At Cafés El Criollo, we use a natural roast to preserve the clean cup created by the washed process.

Why choose this Central American single-origin coffee
El Salvador is one of those origins that still doesn’t get the recognition it deserves in Spain’s premium coffee industry. For anyone who has already tried other Central American single-origin coffees and wants to explore something different, Salvadoran SGH is a great choice: it has the clean, balanced profile typical of washed coffees from this region, but its rounded body (8.75 in internal cupping) sets it apart from coffee from Guatemala or coffee from Costa Rica, where acidity plays a bigger role.
Pacamara is its clearest distinguishing feature. This variety originated in El Salvador, produces large beans, and adds complexity and structure to the profile. It’s not often found in other online specialty coffee shops in Spain, and including it in a lot with Bourbon, Caturra, and Catuaí creates a combination with more layers than its mild profile might suggest.
With 83.25 SCA points, four documented Arabica varieties, and verified SGH classification, its technical specifications are solid. It is also one of the specialty coffees with the best value for money in our entire coffee selection, making it a sensible choice for everyday drinking as well as for anyone looking to try gourmet Salvadoran coffee without taking a big risk.
