This coffee comes from a single producer in the Agua Colorada region, selected together with our partner JJ Marck for their strong commitment to quality, willingness to learn and the diversity of varieties grown on the farm.

For this lot, only fully ripe Marshell and Bourbon cherries were carefully selected and harvested.

After picking, the cherries underwent a 72-hour controlled fermentation before drying. The process creates a coffee with depth and complexity, bringing forward ripe red fruit, wine-like notes and a rich, jammy sweetness.

J Marck is still young, but it is already showing great potential. By working closely with individual producers and focusing on careful selection and controlled processing, we can continue to explore how variety, fermentation and origin shape the final cup.
