Background:

Umalila is a cooperative on the rise. Until just a few years ago, farmers processed their coffee at home. Today, they bring their freshly picked cherries together to the central washing station, where they are processed to modern specialty standards. The result is a coffee that tastes not only exceptionally clean and elegant, but also shows the potential of Tanzania’s Southern Highlands.
Every afternoon in Tanzania’s Southern Highlands, a ritual begins that calls for patience and precision. Farmers deliver only ripe, red coffee cherries to the washing station, where they are processed that same day. After depulping, the beans are carefully sorted, fermented, washed, and then slowly dried on raised beds (African beds) for up to two weeks. This uncompromising process preserves the coffee’s exceptional clarity and elegance. The result is a vibrant filter coffee with notes of caramel, raspberry, and sweet lemon—juicy, complex, and with a long finish.
