Description

Terroir won the 2023 Japanese Barista Championships, demonstrating its exceptional qualities, which result from the unique combination of soil, climate, and cultivation and processing methods. This coffee is exceptionally elegant, with an indescribable depth of sweetness. It unfolds the essence of elegant flowers and delicate notes of fine grapes, with a macaron sweetness in the long-lasting finish. In 2016, Terroir had already stunned the judges and made history when it won the World Barista Championship in Dublin, Ireland, with a perfect 6 in the Espresso Course. This coffee is a prime example of its remarkable terroir and distinctive variety, further highlighted at origin by Jamison Savage’s extraordinary expertise and processing practices at Finca Deborah. Terroir’s journey begins with an elaborate harvesting process in which only the ripest, most flawless cherries are picked by hand. The cherries are then carefully depulped and washed using state-of-the-art equipment that uses very little water. They are then dried in the shade in a climate-controlled drying house, with the cherries carefully laid out on drying beds at different levels. Constant monitoring ensures precise drying of the beans, contributing to the distinctive and refined characteristics that set Terroir apart. Since establishing his first farm, the renowned Finca Deborah, in the early 2000s, Jamison has been a role model for biodynamic farming methods. Since 2016, he has been at the forefront of environmentally conscious, science-based alternative processing approaches, with award-winning results. Through advanced processing techniques and cultivation practices that respect nature, Jamison brings out a coffee’s natural sensory nuances. For this reason, he has long been widely known, greatly admired, and deeply respected by the earliest specialty coffee enthusiasts, but above all by top-level coffee competitors and fans of coffee competitions. Finca Deborah is dedicated to growing and processing only the highest-quality coffee in the world. Finca Deborah lies at an elevation of over 1,900 meters, nestled deep in the mountains of Volcan, where it is shrouded in dense clouds for most of the year. The plantation offers a beautiful natural setting where rare plant and animal species thrive and where Geisha coffee can reach its full potential under the protection of the lush rainforest. Careful monitoring of the harvest is one of the most important steps in a long list of quality-control requirements. By hand-picking only the ripest cherries and processing those that meet our high standards, we can ensure that Finca Deborah Geisha is among the best Geisha coffees in the world.
