This one has a genuinely strange history, and it's not marketing spin it's an actual accident that became a deliberate process. Centuries ago, green coffee shipped from India to Europe spent months at sea in humid wooden ship holds.
By the time it arrived, the beans had swollen, changed colour, and picked up a completely different flavour mellow, low acid, nothing like what left the dock. Europeans preferred it. So Indian producers worked out how to recreate that exact transformation on land, deliberately, without needing a six-month sea voyage. That's monsooning.

Grown in the Western Ghats of Karnataka, 1,100–1,200m, using Kents, S.795, Catimor and Selection 9 varietals. After processing, the beans are laid out in open warehouses along the Malabar coast and exposed to monsoon winds for weeks regularly turned, closely monitored. They swell, turn a pale golden colour, and lose most of their natural acidity in the process.
