Description
ONE COFFEE. ONE MONTH. THEN IT'S GONE.
Every month, Mom tracks down a small lot worth getting excited about and roasts it in tiny batches. When it sells out, it's done. Next month brings something new.
THIS MONTH: Lychee Sumatra
Lychee Sumatra is a radically clean, boundary-pushing limited-edition microlot that completely redefines the origin, exploding with the vibrant, perfume-like sweetness of jammy lychee, fresh rosewater, and honeyed black tea.
Forget everything you know about traditional Sumatran coffee. Named for the real lychee extract infused at the finish, this ultra-rare release drinks more like a complex, tropical fruit tea than a dark roast.
Grown on a pristine 100-hectare estate in the mist-covered highlands of Bener Meriah, Aceh, this lot represents the cutting edge of specialty coffee science. Producers utilize a high-intervention, 60-hour multi-stage anaerobic fermentation inoculated with wine yeast, co-fermenting the cherries with dried fruit powder before finishing with a delicate infusion of real lychee extract.
The result is a radically clean, boundary-pushing cup that smells of fresh rosewater and explodes with tasting notes of sweet jammy lychee, orange zest and a crisp black tea finish.
- Origin: Bener Meriah, Aceh, Indonesia
- Process: Anaerobic Yeast Fermentation & Lychee Infusion
- Profile: Sweet, Floral, & Intensely Tropical
- Best Brewed As: Conical pour-over (V60) with a coarse grind and a high dose to unlock the vibrant top notes.
