There’s a lot going on in the cup. Juicy cherries, kombucha, and peanut butter create a profile that surprises from the very first sip. It’s intensely fruity, lively, and multidimensional, with high acidity, a creamy body, and a long, remarkably distinctive finish. This is one of those coffees that’s hard to mistake for any other.

Both the producer and the processing method contribute to this character. Neri Ortiz Perez has spent years developing his farm and supporting local farmers, focusing on quality and thoughtful processing. Carefully selected cherries undergo multistage fermentation, then dry slowly on raised beds. The result is a coffee in which fermentation doesn’t overwhelm the beans, but brings out their full fruitiness, sweetness, and complexity.

We chose this coffee because these are exactly the kinds of flavors we look for: bold, unexpected, and memorable. It’s a real trip 😉 It proves that Mexico can surprise even those who think they’ve seen it all in specialty coffee. This is a lot that brings a smile during the very first cupping and disappears from the cup just as quickly.
