Roast Profile: Espresso
Ibonia Estate in Kiambu sits at 1,700 metres above sea level, surrounded by preserved forest and fertile volcanic soils. This fully washed AA lot of SL28 and SL34 is a beautifully classic expression of Kenyan coffee: precise, bright and impeccably clean.
What we love at Fjord is the clarity and definition in the cup. Expect a vivid red‑fruit profile—redcurrant and raspberry—wrapped in a muscat grape sweetness that lends a gently winey finish. There’s a lively citrus lift and a delicate florality that keeps the espresso energetic without becoming sharp.
The coffees are selectively handpicked, floated to sort for density, pulped and fermented for 12–24 hours, then washed and given an additional 24‑hour soak before drying on raised beds. That soak is key: it contributes to the exceptional cleanliness and brightness we taste in the final cup.
We’ve roasted this lot for espresso to showcase sweetness, structure and varietal clarity. It’s easy to dial in, delivering a juicy, layered shot on its own and plenty of red‑fruit character in longer serves.
