Description
100% Kaʻu Coffee, Hawaiʻi’s Hidden Gem
Floral, sweet, and buttery, with hints of vanilla, honey, and coffee blossoms, Kaʻū Morning Glory is a medium-light, 100% Kaʻū coffee from Hawaiʻi’s Big Island, made for those seeking hidden gems and ultra-fresh coffees with complexity and nuance.
Hand-harvested, milled in small batches, and roasted to order, Kaʻū Morning Glory earned 97 points from Coffee Review and ranked No. 6 in its global Top 50 Coffees of 2025.
Four Varieties, One Cup
Our signature Kaʻū coffee brings together Typica, Bourbon, Maragogipe, and Caturra grown on nearby farms. Carefully blended, this specialty-grade, washed coffee offers long, juicy fruit notes and a sweet candied-nut finish—a clean expression of Kaʻū’s terroir and varietal diversity.
Each variety brings its own character. Typica often offers a smooth, chocolatey cup with delicate floral notes, while Bourbon contributes caramel and fruit-toned sweetness. Maragogipe can bring baking spice and sandalwood notes, and Caturra adds warm nut and spruce-like notes. Together, they give this Kaʻū coffee its range.
From Sugar Country to Coffee
When the sugar mills closed around Pāhala, farmers in Kaʻū sought out a new crop, and many turned to coffee. Their approach differed from Kona’s, where growers had long favored Kona Typica for its productivity and buyers had come to expect a familiar flavor profile. Kaʻū farmers planted a broader range of varieties, seeking distinctive flavors and plants well suited to the region’s unique climate. Today, farmers across Kaʻū grow a diverse mix of coffee varieties, giving coffee lovers a wide range of flavors to explore, and locals across Hawaiʻi seek out Kaʻū coffee. We’ve worked with growers here for 15 years, and Kaʻū Morning Glory offers a taste of the region’s diversity, shaped by the land and the people who grow it.
Milled in Small Batches, Roasted to Order
Most coffees are milled and graded several months before roasting—a bit like shelling a peanut six months before you eat it. We keep these Kaʻū coffee beans in their parchment, the thin, papery layer that protects each bean, until shortly before roasting. Each week, we mill and grade Kaʻū Morning Glory in small batches to preserve its freshness and lively nuance in the cup. After milling, it is roasted to order, with the roast date labeled on the bag.
How to Brew Kaʻū Morning Glory
We recommend brewing Kaʻū Morning Glory as pour-over, drip, or press pot, with water heated to 202°F–205°F.
