Hulikere Estate is nestled amidst the scenic Bundangiri mountain range, this mountainous terrain provides the perfect climates and soil for Indian coffee cultivation. Headed by Shreedev Hulikere, his family estate boast many arabica varietals and some robusta, all playing a part in Mr Hulikere's master plan for conservation.

As part of the KaadKaapi collective, Mr Hulikere and his peers use coffee as a part of the sustainability and coexistence of both land and wildlife. Despite the trials of operating a farm in this area, such as turbulent weather, climate change and a scarcity of skilled labour in regional areas, Mr Hulikere will always put conservation at the forefront of what his estate is achieving, with hopes other farmers will follow suit.

This lot, like all lots at Hulikere Estate, is selectively hand-picked, then hand sorted before density sorting in water. For this coffee, they put selected cherry into barrels and inoculated with mosto yeast, which has been cultivated from previous batches, before being sealed. The mosto acts as a catalyst to kick start the fermentation. After 48 hours in the sealed barrels the coffee is dried on raised patios and parabolic dryers, before being sorted once more, cupped, then allocated into specific lots. The coffee is then machine hulled, colour sorted and hand garbled to ensure quality throughout.

This heavy processing method ensures that we can get rich earthy notes like chocolate and malt in the cup, with some sweetness like Granny’s hard lollies to carry through, ending in a quince-like finish.

We thank Mr Hulikere for not only his quality coffee, but for his dedication to the ecosystem and wildlife that also call Hulikere Estate home.
