Coffee for this lot comes from smallholder farmers in the mountains surrounding Joyabaj, where FECCEG (Federación Comercializadora de Café Especial de Guatemala) works alongside producers to improve quality, sustainability, and market access. Grown under Organic and Fair Trade Certified standards, this coffee reflects the care and craftsmanship of families who have cultivated coffee in the region for generations.
After harvest, ripe cherries are delivered to the Joyabaj Wet Mill, where they are carefully sorted, floated to remove lower-quality fruit, and honey processed. The coffee is fermented with the fruit for approximately eight hours before being slowly dried on patios and raised African beds, developing exceptional sweetness and clarity in the cup.
The result is a vibrant, fruit-forward coffee with notes of boysenberry, ripe pear, and rich dark chocolate.
History of Coffee in Guatemala
Coffee arrived in Guatemala during the eighteenth century but wasn't cultivated commercially until the mid-1800s. The country's volcanic soils, abundant rainfall, and diverse microclimates quickly established Guatemala as one of the world's premier coffee-producing origins. Today, Guatemalan coffees are celebrated for their balance, sweetness, and remarkable regional diversity.
Growing Coffee in Guatemala
Guatemala's high elevations, volcanic landscapes, and abundant natural resources create ideal conditions for producing exceptional Arabica coffee. Farmers carefully cultivate coffee beneath shade trees across distinct growing regions, each with its own unique climate and flavor profile. In Joyabaj, smallholder producers combine traditional farming methods with careful processing to create coffees that are expressive, complex, and deeply rooted in their origin.
