Origin Story
This experimental co-ferment comes from Finca Monte Blanco, a celebrated single estate in Palestina, Huila, Colombia. Managed by the Sánchez family, the farm sits at approximately 1,750 metres above sea level, where the surrounding mountains, abundant rainfall and consistent daylight create ideal conditions for cultivating exceptional coffee. Huila is one of Colombia’s most renowned coffee-growing regions, celebrated for its diverse varieties and the skill of its coffee producers in developing distinctive, expressive flavour profiles.
Finca Monte Blanco has earned recognition in several prestigious coffee competitions, including first place at the 2017 Yara Champion with Pink Bourbon, second place in 2018, and first and third places at Roasters United in 2019 with Purple Caturra. This commitment to experimentation and quality reflects the Sánchez family’s approach to producing coffees that push the boundaries of traditional flavour.
This lot combines Bourbon and Caturra varieties with an innovative 190-hour fermentation using citrillus fruit nectar, including watermelon and melon, alongside lactobacillus and Saccharomyces cerevisiae yeast cultures. The extended fermentation encourages the development of the coffee’s distinctive fruit character and sweetness. Following fermentation, the cherries are depulped, thoroughly washed and dried on parabolic beds for 10 to 15 days, carefully managing moisture levels to preserve the coffee’s quality and complexity.
The result is a highly distinctive Colombian single origin that combines the foundations of a washed coffee with an experimental fermentation designed to enhance its natural sweetness and tropical fruit character.
Roastery & Brewing Notes
Juicy and expressive, this coffee shines with prominent melon notes and delicate floral elegance. Expect a wave of ripe melon up front, followed by fragrant sweet violet florals and then deeper, earthy notes reminiscent of Manuka honey. The experimental citrillus co-fermentation creates an intriguing balance of fruit, florals and subtle earthiness, with a lingering, nectar-like quality. Best enjoyed as a filter coffee, try it brewed with a V60, AeroPress or French press to explore its unique flavour profile.
