Farm overview:

Coffee production in Sidama is shaped by high elevation, smallholder farming systems and distinct seasonal patterns that support cherry development and harvest. Bochesa is located in Bochesa Kebele in the East Sidama Zone of Ethiopia’s Sidama Region. The washing station sits at approximately 2,000 to 2,100 metres above sea level and was established in 2022 on 1.5 hectares of land.

Bochesa supports the surrounding farming community through the distribution of coffee seedlings, financial support and premium payments based on coffee deliveries. The station employs six permanent workers, four seasonal employees and around 220 temporary labourers during the harvest and processing period.

For this natural process, ripe cherry is received at the station from local farmers and cleaned to remove debris such as leaves, stones and other foreign material. The cherry is then sorted before being placed on raised drying beds. During drying, the coffee is turned regularly to support even moisture reduction and is covered during the hottest part of the day and at night to protect it from excessive heat, condensation and moisture. Drying typically takes around 25 to 35 days, depending on weather conditions and the rate of moisture loss.

Once fully dried, the natural coffee is packed and stored as a separate lot for around 20 days before assessment and shipment. This resting period helps stabilise the coffee before cupping, grading and export preparation. The natural process is chosen to highlight sweetness, fruit character and texture while maintaining careful control over drying and lot separation.
