A fermentation masterpiece crafted by a visionary

This exceptional Geisha comes from Finca El Sendero in Colombia's Cauca region, owned by Andrés Martinez—a trained bioengineer with deep family roots in coffee growing. After working at the renowned research institution Tecnicafé and the award-winning Finca El Paraíso, where he collaborated with the well-known innovator Diego Samuel Bermúdez, Andrés now devotes himself entirely to his own vision: specialty coffee of excellent quality and reliable volume for the international market.

At Finca El Sendero, Andrés cultivates rare varieties such as Geisha, Chiroso, and Papayo, while continually developing his processing and fermentation infrastructure. He has also established cherry collection centers in Nariño and Cauca to standardize quality and volumes, where the beans are carefully processed.

Processing – Semi-Washed at the highest level

This Geisha was processed using an innovative semi-washed method—a process in which the cherries are depulped without water and then fermented with water. The result: a brilliant balance of clarity and sweetness with fruity, floral aromas.

Processing steps in detail:

  1. Harvest & stabilization
The cherries are hand-picked and sorted at 95% ripeness. They then undergo a 48-hour fermentation with brewer's yeast to intensify their aromas.

  2. Fermentation & processing
After depulping, the beans are fermented in plastic tanks for another 24 hours. Regular stirring ensures an even fermentation process.

  3. Drying
The beans go through two drying phases: first at a low temperature for seven days, then at a higher temperature (below 40 °C) until they reach a moisture content of 12%.

Taste

Elegant notes of apricot, lavender, brown sugar, and orange blossom come together in a complex, floral cup with a clear structure—a prime example of modern Colombian Geisha processing.
