Description

About Don Mayo

All of our fantastic Costa Rican coffees come directly from Exclusive Coffees, which means they have control over almost all of the process of getting the coffee to us, including doing their own exporting and importing. Don Mayo is one of the mills that makes up Exclusive Coffees; it’s owned by the Bonilla Family. We’ve gotten many coffees from them over the past 13+ years and they’re always a customer and staff favorite.

Costa Rica is colloquially known as the birthplace of honey processing, harnessing the power of fermentation to impart different characteristics to the final cup. The ‘red’ in red honey means that about 50% of the mucilage is removed from the seed (aka future coffee bean). It’s right in the sweet spot between a washed and natural coffee, boasting a juicy acidity and exceptional sweetness.

P.S. Earlier this year, a few of us traveled to Costa Rica and got to taste this coffee with the producers before we selected it to share with all of you!
