Don Eli Reposado

Don Eli Reposado has become a favourite of ours from our Costa Rican coffees year after year. We trust Carlos and Jacob to continue to produce excellent coffees from their farms, and this coffee is the perfect example of this. We purchase many different lots from the Don Eli farm, for this particular lot, after the cherry is first picked, the coffee is left to rest over night before being touched. This resting period allows for an initial fermentation to begin and provide added fruit character to the cup. Once rested, the coffee is then pulped and processed as a honey, where the beans are dried with a small percentage of the cherry still attached, to allow for an added level of fruit to come into the flavour profile. The result is an elegant, complex and fruity profile, with balanced stone-fruit and caramel notes.
