This decaffeinated coffee comes from Asociación Café del Futuro, a cooperative with more than 600 farmers in the Jaén / Cajamarca region of northern Peru. The region is known for clean, balanced coffees with clear structure and depth. All farms are certified organic and place a strong focus on quality and sustainability.

CO₂ decaffeination

To preserve the flavor profile as much as possible, this coffee is decaffeinated using a particularly gentle CO₂ process under subcritical conditions.

This process uses liquid CO₂, which behaves physically like a gas. The key advantage: It operates at significantly lower temperatures and pressure than conventional methods. This preserves the coffee’s aromatic structure and natural sweetness.

The process at a glance:

The green beans are first briefly steamed. They are then exposed to liquid CO₂ for about seven days, which selectively dissolves the caffeine. Once the coffee reaches a residual caffeine content of 0.08%, the beans are gently dried until they return to their ideal moisture content of 10 to 12%.

The result is a decaffeinated coffee without a flat mouthfeel or bitter aftertaste.
