By nature of it's processing, wherein a coffee beans essential components are removed from the bean and then reintroduced minus the caffeine, Decaf can sometimes taste like a slightly different beast. So when we find a crushable coffee-flavored decaf like this La Concordia Mountain Water Process from communities where we love, love, love the product, as we do in Chiapas, well, we're stoked.

Mountain Water Process coffees are decaffeinated using pure spring water from Pico de Orizaba, the highest mountain in Mexico. Each batch of beans is steamed to create a green coffee extract, which is passed through a filter to remove only the caffeine content, then re-introduced to the green coffee. This process retains all the flavor and nuance inherent to the green coffee while removing 99% of the naturally occurring caffeine, all without the use of chemical additives or solvents.

About this coffee:
In the lush highlands of La Concordia, Chiapas, the CAFECO Cooperative brings together 540 smallholder farmers cultivating coffee across 1,441 hectares. Founded in 2016 in the community of Ejido Nuevo Paraíso, CAFECO was created to strengthen both the quality of its coffees and the livelihoods of its members. Located in Mexico's southernmost state, Chiapas is not only the country's largest coffee-producing region by volume but also a leader in organically certified coffee. The landscape is characterized by small farms (most under five hectares) surrounded by remarkable ecological, cultural, and biological diversity. This richness is reflected in the coffees produced throughout the region. Beyond commercialization, CAFECO supports its producers through access to financing, technical assistance, fair pricing programs, and ongoing training in fermentation, post-harvest management, and microlot development. Over time, the cooperative has become recognized for its consistency, transparency, and meaningful impact within the community, making it a trusted partner for roasters seeking coffees with both quality and traceability. Enjoy!
