Description

Decaf Colombia,

decaffeinated coffee

100% Arabica

Country: Colombia

Region: Narino

SCA: 84.5 points

Decaffeination method: Sugarcane

Tasting notes: nectarine, sponge cake

If you don't want to or can't consume caffeine, but still appreciate the taste and aroma of coffee, try our Decaf. For years, decaffeinated coffee was associated with poor quality and a flat flavor profile, but today we prove that decaf can also be specialty coffee.

How does the Sugarcane method decaffeinate our Arabica?

Decaffeination is always performed on green beans to minimize the impact on their delicate flavor and aromatic compounds. One of the most widely used and highly regarded methods is the Sugarcane Process, also known as the EA (ethyl acetate) method.

Unlike synthetic solvents, this method uses natural ethyl acetate derived from sugarcane. This compound occurs naturally in fruits and fermented products, so it is considered safe and gentle on coffee's sensory profile.

The process begins by steaming the green beans, which opens up their structure. The beans are then rinsed with an ethyl acetate solution, which selectively binds to the caffeine. After the caffeine is removed, the beans are thoroughly cleaned with steam to remove any remaining decaffeinating agent. The result? Coffee without caffeine, but not without character.

The Sugarcane method helps preserve the cup's natural sweetness, clarity, and balance, making it especially suitable for Arabicas with a fruity or chocolatey profile.

Fun fact:

Coffee with the caffeine removed is much more difficult to roast! During decaffeination, green beans already turn brown, making it significantly harder for roasters to monitor the roast. On top of that, these beans roast faster, so it's easy to miss the perfect moment.

Recommended brewing methods:

drip coffee maker, V60 dripper, French press, AeroPress, Chemex, pour-over
