Description

CHOCOLATE | RED WINE | STICKY DATE

Complex and quaffable filter coffee with subtle layers of cooked fruits and chocolate - not too bright, just right. Expect great aroma, smooth body, and moreish finish in your pour-over, V60, or drip setup.

Cerro San Luis Micromill in Grecia, Costa Rica is family run by siblings Alexander & Magali Delgado and their spouses. After harvest, cherries are brought to the home micromill for processing. Dried by the Yellow Honey Process the cherry skin is removed while 25–75% of the sweet mucilage remains, drying in direct sunlight until it oxidises to a golden yellow hue. As is common at mills in Costa Rica, at Cerro San Luis the type of honey (white, yellow or black) is decided by how much mucilage is left on the coffee after depulping.

More about the Microlot:
Cerro San Luis Micromill; Finca Espíritu San Luis; Las Anonas; SL-28; Yellow Honey.

Microlots from Costa Rica  are typically sourced from producers who have invested not only in growing their farms, but also in building and operating their own processing facilities, typically called "micromills." Micromills typically yield fewer than 1,000 bags annually, and are often independently owned by a family or small group of producers. Microlots in Costa Rica are separated out based on differentiated characterisations such as processing, variety, or some other aspect. Microlots carry the highest quality as well as the highest level of traceability.
