Coffee Review Score of 93 - "Juicy, aromatic and sweetly spice-toned. Red plum, guava, blood orange, pink peppercorn and dark chocolate in aroma and cup. Bright, fruit-toned acidity; plush, syrupy mouthfeel. The finish is persistent, centering red plum, pink peppercorn and dark chocolate."

The Thermal Shock Process

Elkin Guzman’s family has grown coffee in Huila for over 70 years, dedicating the last 12 years to advanced processing science. For this lot, hand-selected Tabi cherries undergo a 60-hour anaerobic fermentation in sealed tanks before being transferred to larger vessels for controlled oxidation. Warm water (35°C–40°C) is introduced for an additional 60 hours, followed by a cold-water shock that stops fermentation instantly to lock in unique fruit and candy aromatics. The beans are then slow-dried on raised beds for 18–24 days.
