LiLo Coffee Roastersでもお馴染みのサントゥアリオプロジェクトはCamilo Merizalde氏が主導するプロジェクトです。1998年にコロンビアのカウカ県ポパヤンの地で「コロンビアマイルド」を復活を目指した彼は、一から農園を設計し、木の播種から収穫、精選にいたるまで非常に高いクオリティを持った独自のマニュアルを作り、スペシャルテイコーヒーの生産に力をいれてきました。

ブラジルやメキシコなど、他国の生産者との関わりの中で、ユニークで最高のコーヒーをつくろうと本格始動したのがSantuario projectです。

The Santuario Project is led by Camilo Merizalde, focusing on producing high-quality coffee using special varieties and unique processing methods. This project collaborates with partners in Colombia, Brazil, Mexico, Costa Rica, and other countries, aiming to create unique and exceptional coffee.
