origin and provenance
This Pink Bourbon is produced by María Belén Díaz at Finca Resinas, in the Acevedo region of Huila, one of Colombia's most suitable areas for high-altitude specialty coffee.
María Belén Díaz is part of the Huila Condor project, dedicated to promoting Colombian women coffee producers, and was one of the first producers in the region to earn an advanced coffee processing certification from The Forest Academy.
The cherries are hand-picked and undergo a 24-hour pre-fermentation as whole cherries, followed by 36 hours of anaerobic fermentation in sealed bags with the mucilage still present. The coffee is then slowly dried on raised beds for about 15 days.
This approach develops an exceptionally clear, elegant profile in which citric acidity combines with floral notes, green apple, green tea, and tangerine.
Pink Bourbon, now one of the most sought-after varieties in contemporary specialty coffee, is prized for its extraordinary aromatic complexity and its ability to deliver remarkable brightness in the cup.
A refined, modern coffee that showcases the most advanced side of Colombia's new specialty coffee scene.
