Why Sugar Cane Process?
The sugar cane method, celebrated in Colombia, involves a careful decaffeination process that uses water, steam, and natural ethyl acetate derived from sugar cane. This allows for caffeine removal without harsh chemicals, maintaining the bean’s natural structure and flavor integrity.
Process Details
1. Hydration: The beans are gently steamed to open their pores.
2. Decaffeination: They are then immersed in a sugar cane solution, removing 99.9% of caffeine.
3. Purification: Finally, the beans are cleaned and dried, returning them to their natural state with the same moisture level.
