Colombia La Macarena Decaffeinated is produced at Finca La Macarena, the farm owned by Wilton Benitez, one of the most innovative producers in Colombia’s specialty coffee scene. Located at an altitude of 1,900 meters, the farm is known for its scientific approach to coffee processing, combining microbiological research, controlled fermentation, and rigorous selection protocols.

The cherries are hand-picked, sorted by size and density, and subjected to double sterilization with ozonated water and UV light. This is followed by a 48-hour first fermentation with Saccharomyces pastorianus yeast, then a 68-hour second fermentation enriched with the natural juices produced during processing. After slow, controlled drying, the coffee is decaffeinated using the Sugar Cane Process, a natural method that uses ethyl acetate derived from sugarcane and helps preserve the cup’s sweetness, aromatics, and structure.
